Ingredients⚓︎

  • 3 carrots, sliced
  • 3 pieces of celery, chopped
  • 1/2 onion, chopped
  • 3 cloves of garlic, chopped
  • 2 cups dried green or brown lentils, rinsed
  • 8 cups vegetable broth
  • 8 oz tomato sauce
  • 1 tbsp ground cumin
  • 1.5 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 8 oz baby spinach
  • Olive oil, for serving

Recipe⚓︎

  • In an Instant Pot, combine the carrots, celery, onion, garlic, lentils, vegetable broth, tomato sauce, 1 cup of water, cumin, coriander, turmeric, bay leaf, salt and pepper
  • Select high pressure for 10 minutes
  • Quick release and remove the bay leaf
  • Stir in the spinach and let it wilt
  • Serve the soup with a drizzle of olive oil and sprinkle of black pepper
