Ingredients⚓︎
- 3 carrots, sliced
- 3 pieces of celery, chopped
- 1/2 onion, chopped
- 3 cloves of garlic, chopped
- 2 cups dried green or brown lentils, rinsed
- 8 cups vegetable broth
- 8 oz tomato sauce
- 1 tbsp ground cumin
- 1.5 tsp ground coriander
- 1/2 tsp ground turmeric
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp ground black pepper
- 8 oz baby spinach
- Olive oil, for serving

- In an Instant Pot, combine the carrots, celery, onion, garlic, lentils, vegetable broth, tomato sauce, 1 cup of water, cumin, coriander, turmeric, bay leaf, salt and pepper
- Select high pressure for 10 minutes
- Quick release and remove the bay leaf
- Stir in the spinach and let it wilt
- Serve the soup with a drizzle of olive oil and sprinkle of black pepper
